Peppermint

I've been on a peppermint kick. It all started 2 Christmases ago with one of my neighbors making this cake with this frosting. I only had one slice. Of course, it was a huge slice since the cake is a monster. I froze it and ate it bit by bit from the freezer, savoring every bite. After it was gone, I craved it, longed for it, and even daydreamed about it - complete with drool. I finally made it this last Christmas for my sister's birthday (on Christmas Day). It was a hit, but of course, there was none left. So, now I'm back to thinking of an event that would be appropriate for a fancy, triple-decker, peppermint red velvet cake. I'm thinking about trying it as cupcakes so that I can freeze them. I can feel the poundage forming around my middle. Mmmmm.

All that is prelude to what I really was going to say - that I found a recipe for peppermint coffee. It involved adding some chocolate, peppermint extract, milk, and a little bit of cinnamon to a cup of coffee. I, of course, added a quarter cup of sugar because that's what I do (ok, maybe not that much). It was fabulous. Now, as the laziness is strong with this one, I've been adding a piece of candy cane from the ones I still have left over from Christmas and maybe a little cocoa powder. Quite good.

Peppermint red velvet cake with peppermint coffee...how would that be?
